Main ingredient: shrimp
Ingredients: Zhenxuan pot sauce, green onion, ginger, garlic, carrot, coriander
● Open the back of the shrimps with a knife, remove the shrimps line, grasp the starch and water well, pour away the upper clear liquid, leave the bottom wet starch for sizing
● Heat the oil in a wok at 60% heat. Fry the starched shrimp balls in a wok until golden and set. Then fry them again at a higher oil temperature
● Keep the bottom oil in the pot, stir-fry chives, ginger, carrot, and select pot juice
● Put the fried shrimp balls in the pan, stir fry for 3 times, cover with the juice, sprinkle with coriander and remove from the pan
